Baking Lamingtons…

Lamingtons were an absolute must at every Eid (Islamic religious celebration) back when I was living with my parents in England. My mother would put me and my sister to work once she had baked the cake (from scratch, unlike me!) and whilst one of us coated the cake in chocolate, the other would roll it in dessicated coconut. We would sneak a taste and delve ourselves in the magnificent aroma of baking and chocolate. We would make an entire box full of lamingtons and enjoy them every afternoon at tea time. I would even gobble them up at breakfast!
